Ingredients
  

For the Cauliflower and Meat Sauce
  • 1 head cauliflower, cut into florets Make sure not to overcook; tender but not mushy.
  • 1 pound ground beef Can substitute with ground turkey, chicken, or plant-based ground meat.
  • 1 cup shredded cheddar cheese Alternative options: mozzarella or pepper jack cheese.
For the Sauce
  • 8 oz cream cheese Can replace with Greek yogurt or dairy-free cream cheese.
  • 1 cup beef broth
Seasonings
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp smoked paprika
  • 1 tsp salt
  • 0.5 tsp black pepper

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large pot, bring water to a boil. Add the cauliflower florets and cook until tender (about 5-7 minutes). Drain and set aside.
Cooking the Meat
  1. In a large skillet over medium heat, cook the ground beef until browned. Drain excess fat if necessary.
  2. Stir in garlic powder, onion powder, smoked paprika, salt, and pepper. Cook for an additional 2 minutes to allow the flavors to meld.
Making the Cheese Sauce
  1. In a separate bowl, combine the cream cheese and beef broth. Whisk until smooth.
  2. Stir in the shredded cheddar cheese until melted and well combined.
Combining and Baking
  1. In a large mixing bowl, combine the cooked cauliflower and the beef mixture. Pour the cheese sauce over the top and mix until everything is well coated.
  2. Pour the mixture into a greased 9x13-inch baking dish, spreading it evenly.
  3. Place the dish in the preheated oven and bake for 15-20 minutes or until heated through and slightly bubbly.
Serving
  1. If desired, top with diced pickles and tomatoes before serving.
  2. Remove from the oven, let cool for a few minutes, and garnish with fresh parsley if desired.

Notes

This dish can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in the oven or microwave until warmed through. Excellent paired with a green salad or avocado slices for added texture.
