  • 2 cups broccoli florets
  • 1 cup shredded cheddar cheese
  • 1 cup heavy cream
  • 2 cups vegetable broth Use broth rich in herbs for added flavor.
  • 1 cup onion, diced
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Butter or olive oil for sautéing Use as needed.

Method
 

Preparation
  1. In a large pot, melt butter or olive oil over medium heat.
  2. Add diced onion and minced garlic, sautéing until fragrant.
Cooking
  1. Add the broccoli florets and vegetable broth to the pot.
  2. Bring to a boil and then reduce to a simmer for 10-15 minutes until the broccoli is tender.
  3. Use an immersion blender to puree the soup until smooth, or carefully transfer to a blender.
  4. Stir in heavy cream and shredded cheddar cheese. Mix until the cheese is melted and the soup is creamy.
  5. Season with salt and pepper to taste.
  6. Serve warm and enjoy!

Notes

For added flavor, consider using vegetable broth that is rich in herbs and spices. For a thicker soup, add more cheese or use a small amount of xanthan gum as a thickener. Serve with optional toppings like chives or sour cream.
