  • 1 lb chicken breast Cut into pieces
  • 1/2 cup barbecue sauce (sugar-free)
  • 1 cup shredded cheese (cheddar or mozzarella) You can experiment with different cheese types
  • 1/4 cup chopped green onions
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper to taste
  • Bacon (optional for wrapping) Use thick-cut for extra flavor

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a bowl, mix the chicken breast pieces with the barbecue sauce, cheese, green onions, garlic powder, onion powder, salt, and pepper until well combined.
  3. Form the mixture into balls or 'bombs.' If using bacon, wrap each chicken ball in a slice of bacon.
Cooking
  1. Place the bombs on a baking sheet and bake for 25-30 minutes or until the chicken is cooked through and the bacon is crispy if used.
Serving
  1. Serve hot with extra barbecue sauce if desired.

Notes

Store leftovers in an airtight container in the refrigerator for 3-4 days or freeze for up to 2 months. To reheat, use the oven or microwave carefully to avoid sogginess.
