  • 1 packet Ranch Seasoning (dry mix) Adjust the amount based on your taste preferences.
  • 1/2 cup Mayonnaise (full-fat for keto) Can substitute with dairy-free alternatives.
  • 1/4 cup Grated Parmesan Cheese Can substitute with dairy-free alternatives.
  • 1 cup Shredded Cheddar Cheese Try different cheeses like mozzarella or pepper jack for variation.
  • Salt and Freshly Ground Black Pepper Add to taste.

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Arrange the chicken thighs in a baking dish and season them with salt and pepper to taste.
Mix and Bake
  1. In a bowl, mix together the ranch seasoning, mayonnaise, Parmesan cheese, and cheddar cheese until you have a creamy mixture.
  2. Spread this cheesy ranch mixture over the chicken thighs evenly.
  3. Bake in the oven for 30 to 40 minutes, or until the chicken is golden brown and fully cooked (the internal temperature should reach 165°F or 74°C).
Serving
  1. Once done, serve hot alongside a fresh side salad or cooked vegetables.

Notes

This dish tastes great on its own or paired with a side salad or steamed vegetables. You can also serve it with cauliflower rice or zucchini noodles for a complete low-carb meal. To store leftovers, let the chicken cool down first, place it in an airtight container, and keep it in the refrigerator for 3 to 4 days. Reheat in the oven or microwave before serving again. For extra crunch, sprinkle some crushed pork rinds on top before baking.
