  • 1 lb chicken breast, cut into bite-sized pieces
  • 1 cup almond flour
  • 1/2 cup grated Parmesan cheese
  • 2 large eggs beaten
  • 1 tsp garlic powder
  • 1 tsp paprika
  • to taste Salt and pepper
  • Buffalo sauce, for dipping
  • Ranch dressing, for dipping

Method
 

Preparation
  1. Preheat the air fryer to 400°F (200°C).
  2. In a bowl, mix together almond flour, Parmesan cheese, garlic powder, paprika, salt, and pepper.
  3. In another bowl, beat the eggs.
  4. Dip each chicken piece in the egg and then coat it in the almond flour mixture.
Cooking
  1. Place the coated chicken nuggets in the air fryer basket in a single layer.
  2. Cook for 10-12 minutes, flipping halfway, until golden and crispy.
Serving
  1. Serve with buffalo sauce and ranch dressing for dipping.

Notes

Make sure to cut the chicken into even bite-sized pieces to ensure they cook evenly. You can add your favorite spices to the almond flour mixture to customize the flavor. For an extra crispy coating, try double-coating the chicken. Dip the chicken in the egg and almond flour mixture twice.
