  • 1 cup cooked quinoa Can be prepared quickly from dry quinoa.
  • 1 cup blueberries
  • 1 each avocado, diced
  • 1/2 cup goat cheese, crumbled Can be substituted with feta cheese.
Dressing
  • 2 tablespoons olive oil
  • 2 tablespoons honey Can be substituted with maple syrup for vegan option.
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Method
 

Preparation
  1. In a large bowl, combine the chopped kale, cooked quinoa, blueberries, diced avocado, and crumbled goat cheese.
  2. In a small bowl, whisk together the olive oil, honey, lemon juice, salt, and pepper to make the dressing.
  3. Drizzle the dressing over the salad and toss gently to combine.
  4. Serve immediately or store in the fridge for up to 3 days.

Notes

To store the salad, keep it in an airtight container in the refrigerator. It'll last for up to 3 days. For best texture, keep dressing separate until ready to serve. Optional additions include nuts, seeds, or various fruits.
