  • 2 lbs boneless, skinless chicken breasts
  • 1 cup salsa
  • 1 packet taco seasoning
  • 1 tbsp olive oil
  • 1 cup chicken broth
  • Salt and pepper to taste

Method
 

Preparation
  1. Season the chicken with salt, pepper, and taco seasoning.
  2. Set the Instant Pot to ‘Sauté’ and heat the olive oil.
  3. Add the seasoned chicken and sauté for 2-3 minutes until slightly browned.
Cooking
  1. Add the salsa and chicken broth to the pot.
  2. Close the lid and set to ‘Pressure Cook’ for 10 minutes.
  3. Once cooking is complete, allow the pressure to release naturally for 5 minutes, then quick release the remaining pressure.
  4. Shred the chicken with two forks and stir it back into the sauce.
Serving
  1. Serve in tacos, salads, or bowls, topped with optional toppings as desired.

Notes

For extra flavor, marinate the chicken with taco seasoning and salsa for a few hours before cooking. For spice, use hot salsa or add jalapeños. Ensure enough liquid in the pot to prevent burning. Leftover chicken can be used in sandwiches, salads, or pasta.
