Preparation
  1. In a small bowl, crack the eggs and beat them together with salt, black pepper, and garlic powder until well mixed.
  2. Heat the butter in a non-stick skillet over medium heat until melted.
Cooking
  1. Pour the beaten eggs into the skillet and let them sit for a few seconds.
  2. Gently stir the eggs with a spatula, pushing them from the edges toward the center.
  3. As the eggs begin to set, add the cottage cheese to the pan.
  4. Continue to cook, stirring gently, until the eggs are fully cooked and fluffy, about 3-4 minutes.
  5. Remove from heat and serve immediately.

Notes

Serve warm with toast, fresh fruit, or avocado slices. Adding fresh herbs like chives or parsley enhances the flavor even more. If you have leftovers, let them cool down, then store in an airtight container in the fridge for up to 2 days. Reheat in the microwave when ready to eat.
