  • 2 cups mixed berries (strawberries, blueberries, raspberries) Use fresh or frozen berries.
  • 2 cups rolled oats You may substitute with quick oats, but texture will vary.
  • 1 cup milk (or plant-based milk)
  • 1/2 cup Greek yogurt (or plant-based yogurt) Any yogurt can be used.
  • 1/4 cup honey or maple syrup Adjust sweetness to taste.
  • 2 units eggs Can substitute with flax eggs for vegan option.
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 1 pinch salt

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C). Grease a baking dish.
  2. In a large bowl, mix together the oats, baking powder, cinnamon, and salt.
  3. In another bowl, whisk together the milk, yogurt, honey, eggs, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and mix until combined.
  5. Gently fold in the mixed berries.
  6. Pour the mixture into the prepared baking dish and spread it evenly.
Baking
  1. Bake for 30-35 minutes, or until the top is golden and a toothpick comes out clean.
  2. Allow to cool slightly before slicing and serving. Enjoy warm or cold!

Notes

Store leftovers in an airtight container in the refrigerator for up to five days. Can freeze for up to three months. Use fresh or frozen berries; if using frozen, no need to thaw them. For added texture, consider adding nuts or seeds. You can switch up flavors using different fruits, or for a chocolate variation, add cocoa powder or chocolate chips.
