For the Muffins
  • 1 cup pancake mix
  • 1 cup milk
  • 2 pcs eggs
  • 1 cup cooked and crumbled sausage can use turkey or chicken sausage for a lighter option
  • 1/2 cup shredded cheese optional
  • 1/4 cup maple syrup optional
  • 1 teaspoon vanilla extract optional
  • 1 spray cooking spray or use muffin liners

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and grease a mini muffin tin with cooking spray or line it with muffin liners.
  2. In a bowl, mix the pancake mix, milk, and eggs until smooth.
  3. Fold in the cooked sausage, cheese, maple syrup, and vanilla extract (if using).
  4. Fill each muffin cup about 3/4 full with the batter.
Baking
  1. Bake for 12-15 minutes or until golden and a toothpick inserted comes out clean.
  2. Allow to cool slightly before removing from the muffin tin.

Notes
