Preparation
- Preheat the oven to 350°F (175°C) and grease a mini muffin tin with cooking spray or line it with muffin liners.
- In a bowl, mix the pancake mix, milk, and eggs until smooth.
- Fold in the cooked sausage, cheese, maple syrup, and vanilla extract (if using).
- Fill each muffin cup about 3/4 full with the batter.
Baking
- Bake for 12-15 minutes or until golden and a toothpick inserted comes out clean.
- Allow to cool slightly before removing from the muffin tin.
Notes
