Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Toss the diced sweet potatoes with avocado oil, garlic powder, onion powder, smoked paprika, ground cinnamon, kosher salt, and black pepper.
  3. Spread them out on a baking sheet and roast in the oven for about 25-30 minutes, or until they are golden and tender.
Cooking the Beef
  1. In a large skillet, heat avocado oil over medium heat.
  2. Add minced garlic and diced onion, cooking until soft.
  3. Then, add the ground beef along with taco seasoning, cumin, kosher salt, and black pepper.
  4. Cook until the beef is browned and cooked through, about 7-10 minutes.
Making the Hot Honey Drizzle
  1. In a small saucepan, combine honey, hot sauce, red pepper flakes, and unsalted butter.
  2. Cook over low heat until the butter is melted and everything is well mixed.
  3. Set aside.
Assembly
  1. In bowls, layer the roasted sweet potatoes and cooked beef.
  2. Top with a generous scoop of cottage cheese, sliced avocado, and fresh cilantro.
  3. Drizzle with the hot honey mixture and serve with lime wedges on the side.
