Preparation
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, whisk together the eggs, salt, pepper, garlic powder, and onion powder.
- Stir in the cooked protein and mixed veggies until everything is well combined.
- Grease a muffin tin or use silicone muffin cups and pour the mixture evenly into each cup.
Baking
- Bake for 20-25 minutes or until the egg is set and slightly golden on top.
- Let cool for a few minutes, then remove from the tin and allow to cool completely.
Storage
- Store in airtight containers or freezer bags and freeze for up to 3 months.
- To reheat, microwave for about 1-2 minutes until heated through.
Notes
Feel free to customize with different veggies and proteins. Best served warm, possibly with fresh herbs or salsa on top.
