Ingredients
  

Main Ingredients
  • 6 large large eggs
  • 1 cup cooked lean protein (chicken, turkey, or tofu) Choose your preferred protein.
  • 1 cup mixed veggies (spinach, bell peppers, onions, etc.) Use your favorite combination of vegetables.
  • Salt and pepper to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, whisk together the eggs, salt, pepper, garlic powder, and onion powder.
  3. Stir in the cooked protein and mixed veggies until everything is well combined.
  4. Grease a muffin tin or use silicone muffin cups and pour the mixture evenly into each cup.
Baking
  1. Bake for 20-25 minutes or until the egg is set and slightly golden on top.
  2. Let cool for a few minutes, then remove from the tin and allow to cool completely.
Storage
  1. Store in airtight containers or freezer bags and freeze for up to 3 months.
  2. To reheat, microwave for about 1-2 minutes until heated through.

Notes

Feel free to customize with different veggies and proteins. Best served warm, possibly with fresh herbs or salsa on top.
