Preparation
- Preheat your oven to 350°F (175°C).
- In a bowl, whisk the eggs and season with salt and pepper.
Cooking
- In a skillet, heat a little olive oil over medium heat and sauté the mixed veggies until tender.
- Add the lean protein to the skillet and cook until done.
- Stir the veggie and protein mixture into the egg mixture.
- Pour the mixture into greased muffin tins or oven-safe bowls.
- Bake for 20-25 minutes or until the eggs are set.
Cooling and Storing
- Let cool and freeze in individual portions.
- Store the breakfast bowls in the freezer in airtight containers or freezer-safe bags.
Notes
You can serve the bowls warm right out of the microwave. Enjoy as they are, or add hot sauce or salsa for extra flavor. Make a big batch to last you for the week, saving time in the mornings. You can also add cheese or swap out the mixed veggies for seasonal vegetables.
