Preparation
- Preheat your oven to 350°F (175°C).
- In a large bowl, whisk together the eggs and cottage cheese until smooth.
- Stir in the spinach and any additional veggies you like.
- Season with salt and pepper.
Baking
- Pour the mixture into greased muffin tins, filling each cup about 3/4 full.
- Sprinkle shredded cheese on top.
- Bake for 20-25 minutes, or until the egg bites are set and lightly golden.
- Let them cool slightly before removing from the muffin tin.
Notes
Enjoy warm or store in the fridge for meal prep. Use silicone muffin liners for easy removal of the egg bites.
