- In a large pan, heat the vegetable oil over medium-high heat.
- Add the minced garlic and sauté until fragrant, about 30 seconds.
- Add the diced chicken to the pan and cook until browned and cooked through, about 5-7 minutes.
- Stir in the mixed vegetables and cook for another 3-4 minutes until heated through.
- Add the cooked rice to the pan and pour in the soy sauce, stirring to combine all the ingredients.
- Season with salt and pepper to taste.
- Cook for an additional 2-3 minutes, allowing the rice to get crispy spots.
- Serve hot, garnished with chopped green onions and a drizzle of sesame oil if desired.
Notes
If you have leftovers, store them in an airtight container in the refrigerator for up to 3-4 days. Reheat in a pan over medium heat until heated through.
