Ingredients
  

Pasta and Sauce Base
  • 8 oz Dry Macaroni Whole wheat or chickpea pasta can be used
  • 1 lb Lean Ground Beef Can be swapped with ground turkey or chickpeas
  • 1 cup Chopped White Onion Yellow onion works as a substitute
  • 2 cloves Minced Garlic Use freshly minced for maximum flavor
  • 2 cups Bell Peppers (Red, Green & Yellow) Use any mix based on preference
  • 2 tablespoons Butter Olive oil can be used as a healthier alternative
  • 8 oz Light Cream Cheese Regular cream cheese can be used for a richer sauce
  • 1 cup Shredded Mozzarella Any favorite melting cheese can substitute
  • 4 slices Light Cheese Slices Any good melting cheese slice will do
Spices
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
  • 1 teaspoon Paprika
  • 1/2 teaspoon Chili Flakes Adjust to taste
Garnish
  • 1/4 cup Fresh Parsley Optional for garnish

Method
 

Cooking the Pasta
  1. Bring a large pot of salted water to a boil. Add the macaroni and cook according to package instructions until al dente. Drain and set aside.
Sautéing the Vegetables
  1. In a large skillet, melt butter over medium heat. Add the chopped onion, minced garlic, and bell peppers. Cook until the vegetables are soft, about 5-7 minutes.
Browning the Beef
  1. Add the ground beef to the skillet. Cook, stirring regularly, until it’s browned and cooked through. Season with salt, pepper, paprika, and chili flakes.
Making the Sauce
  1. Reduce the heat to low. Add the cream cheese and mix it into the beef and vegetables. Stir until it’s all combined and creamy. Add the shredded mozzarella and cheese slices, continuing to mix until melted and smooth.
Combining Pasta and Sauce
  1. Add the cooked macaroni to the skillet. Stir until the pasta is evenly coated with the cheesy sauce.
Serving
  1. Remove from heat and garnish with fresh parsley if desired.

Notes

Serve hot, alongside a fresh side salad for extra crunch. Extra parsley or chili flakes can be added for more flavor.
