  • 1 cup cottage cheese
  • 3 large eggs
  • 1/2 cup milk
  • 1/4 cup honey or maple syrup Adjust sweetness to taste.
  • 1 teaspoon vanilla extract
Dry Ingredients
  • 2 cups rolled oats
  • 1 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • Salt to taste Salt
Add-ins
  • 1 cup blueberries Can use other fruits like raspberries or chopped apples.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine the cottage cheese, eggs, and milk until smooth.
  3. Stir in honey and vanilla extract.
  4. In another bowl, mix the oats, baking powder, cinnamon, and salt.
  5. Fold the dry ingredients into the wet mixture.
  6. Gently fold in the blueberries.
Baking
  1. Pour the mixture into a greased baking dish and spread evenly.
  2. Bake for 30-35 minutes, or until set and lightly golden on top.
  3. Cool slightly before slicing and serve warm.

Notes

Store leftovers in an airtight container in the refrigerator for up to five days. Reheat in the microwave for a quick breakfast. Be sure to grease your baking dish well to prevent sticking.
