Preparation
- Cook the elbow macaroni according to package instructions, adding the broccoli florets in the last 2-3 minutes of cooking. Drain and set aside.
- In the same pot, melt the butter over medium heat.
- Add the flour and stir for about 1 minute.
- Gradually whisk in the milk, cooking until the mixture thickens.
- Stir in the cheese until melted and smooth.
- Add the cooked pasta and broccoli to the cheese sauce, mixing well.
- Season with garlic powder, salt, and pepper to taste.
Serving
- Serve Healthy Broccoli Mac and Cheese warm on its own or with a side salad.
Notes
For a crunchier topping, sprinkle toasted breadcrumbs or crushed crackers on top before serving. Can easily be customized with other vegetables like spinach or peas.
