Ingredients
  

Pasta and Vegetables
  • 8 ounces elbow macaroni
  • 2 cups broccoli florets Add to pasta in final cooking minutes.
Cheese Sauce
  • 2 cups shredded cheese (cheddar, mozzarella, or a blend) Use your favorite cheese blend.
  • 2 cups milk
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Method
 

Preparation
  1. Cook the elbow macaroni according to package instructions, adding the broccoli florets in the last 2-3 minutes of cooking. Drain and set aside.
  2. In the same pot, melt the butter over medium heat.
  3. Add the flour and stir for about 1 minute.
  4. Gradually whisk in the milk, cooking until the mixture thickens.
  5. Stir in the cheese until melted and smooth.
  6. Add the cooked pasta and broccoli to the cheese sauce, mixing well.
  7. Season with garlic powder, salt, and pepper to taste.
Serving
  1. Serve Healthy Broccoli Mac and Cheese warm on its own or with a side salad.

Notes

For a crunchier topping, sprinkle toasted breadcrumbs or crushed crackers on top before serving. Can easily be customized with other vegetables like spinach or peas.
