  • 2 medium sweet potatoes, peeled and diced

  • 1 bell pepper diced
  • 1 onion diced
  • 2 cloves garlic, minced
  • 1 tsp paprika
  • 1 tsp cumin
  • Salt and pepper to taste

Preparation and Cooking
  1. Preheat the oven to 400°F (200°C).
  2. In a large oven-safe skillet, heat olive oil over medium heat.
  3. Add onion and garlic, cooking until soft.
  4. Add ground turkey and cook until browned.
  5. Stir in sweet potatoes, bell pepper, spices, and vegetable broth.
  6. Bring to a simmer, then cover and transfer to the oven.
  7. Bake for 25-30 minutes until sweet potatoes are tender.
  8. Optional: Stir in leafy greens for an extra boost before serving.

Notes

Serve hot from the oven or with a simple green salad or crusty bread. For extra flavor, top with sour cream or cheese. Store leftovers in an airtight container in the fridge for up to 3 days or freeze for up to 2 months.
