Main Ingredients
  • 1 lb lean ground beef (93% preferred) Use lean ground beef for a healthier option.
  • 2 medium sweet potatoes, peeled and diced Sweet potatoes can be substituted with brown rice or quinoa.
  • 1 cup cottage cheese (low-fat or full-fat) Cottage cheese adds creaminess and protein.
  • 1 large yellow onion, diced Onion adds flavor; feel free to use red onion if preferred.
  • 1 avocado sliced For added creaminess and healthy fats.
Seasoning and Oils
  • 2 tbsp olive oil
  • 1 packet taco seasoning Alternatively, use 2 tbsp of homemade taco seasoning.
  • 2 tbsp hot honey Can be store-bought or homemade.
  • 1/2 tsp paprika
  • 1/2 tsp garlic powder
  • 1/4 tsp cinnamon
  • Salt and pepper to taste

Method
 

Preparation
  1. Preheat your oven to 400°F.
  2. Toss the diced sweet potatoes with 1 tablespoon of olive oil, paprika, garlic powder, cinnamon, salt, and pepper.
  3. Spread the sweet potatoes on a baking sheet and roast for 40 to 45 minutes, stirring halfway through.
Cooking
  1. While the sweet potatoes are roasting, heat the remaining olive oil in a skillet over medium heat.
  2. Add the diced onion and cook until softened.
  3. Add the ground beef to the skillet. Season it with the taco seasoning and cook until the beef is browned and flavorful.
Assembly
  1. In each bowl, layer the roasted sweet potatoes, ground beef, sliced avocado, and cottage cheese.
  2. Drizzle the hot honey over the top and garnish with chopped cilantro, red pepper flakes, or a lime wedge if desired.

Notes

To store leftovers, let the bowl cool to room temperature. Place in an airtight container and refrigerate for 3 to 4 days. Reheat before serving. For added flavor, consider marinating the ground beef with the taco seasoning beforehand.
