Preparation
- Preheat your oven to 400°F.
- Toss the diced sweet potatoes with 1 tablespoon of olive oil, paprika, garlic powder, cinnamon, salt, and pepper.
- Spread the sweet potatoes on a baking sheet and roast for 40 to 45 minutes, stirring halfway through.
Cooking
- While the sweet potatoes are roasting, heat the remaining olive oil in a skillet over medium heat.
- Add the diced onion and cook until softened.
- Add the ground beef to the skillet. Season it with the taco seasoning and cook until the beef is browned and flavorful.
Assembly
- In each bowl, layer the roasted sweet potatoes, ground beef, sliced avocado, and cottage cheese.
- Drizzle the hot honey over the top and garnish with chopped cilantro, red pepper flakes, or a lime wedge if desired.
Notes
To store leftovers, let the bowl cool to room temperature. Place in an airtight container and refrigerate for 3 to 4 days. Reheat before serving. For added flavor, consider marinating the ground beef with the taco seasoning beforehand.
