Preparation
  1. Preheat your grill or stovetop grill pan to medium-high heat.
  2. Season the chicken breasts with olive oil, salt, and pepper.
Cooking
  1. Grill the chicken for about 6-7 minutes on each side or until fully cooked and juices run clear. Remove from grill and let rest before slicing.
  2. While the chicken is grilling, steam or blanch the broccoli until tender but still bright green.
Sauce Preparation
  1. In a small bowl, mix together mayonnaise, minced garlic, and lemon juice to make the creamy garlic sauce.
Assembly
  1. To assemble the bowls, layer rice or quinoa (if using), followed by grilled chicken, broccoli, and drizzle generously with the creamy garlic sauce.
