Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and grease a 9-inch round cake pan.
  2. In a large bowl, mix together Greek yogurt, sugar, vegetable oil, eggs, and vanilla until smooth.
  3. In another bowl, whisk together flour, baking powder, baking soda, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. If using, fold in lemon zest and any desired mix-ins.
  5. Pour the batter into the prepared pan and spread evenly.
Baking
  1. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
  2. Allow to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
Serving
  1. Serve slices slightly warm or at room temperature with optional toppings like whipped cream, powdered sugar, or fresh fruit.
