  • 2 tablespoons olive oil
  • 4 cloves garlic (minced)
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese Use freshly grated for best flavor
  • Salt and pepper to taste
  • Fresh parsley (for garnish)

Method
 

Preparation
  1. Cook the pasta according to package instructions until al dente. Drain and set aside.
Cooking
  1. In a large skillet, heat olive oil over medium heat.
  2. Add the minced garlic and sauté until fragrant, about 1 minute.
  3. Pour in the heavy cream and bring to a simmer.
  4. Stir in the grated Parmesan cheese until melted and creamy.
  5. Add the cooked pasta to the sauce and toss to coat.
  6. Season with salt and pepper to taste.
Serving
  1. Serve hot, garnished with fresh parsley.

Notes

To store leftovers, place in an airtight container and refrigerate for up to 3 days. Reheat in the microwave or stovetop with a splash of cream or water to loosen the sauce. For a lighter version, substitute half of the heavy cream with chicken or vegetable broth and add vegetables like spinach or broccoli.
