Preparation
- In a bowl, mix melted butter, minced garlic, Parmesan cheese, Italian seasoning, salt, and pepper.
- Place the halved potatoes in the bottom of the crockpot.
- Season the chicken breasts with salt and pepper and place them on top of the potatoes.
- Pour the garlic Parmesan mixture over the chicken and potatoes.
Cooking
- Cover and cook on low for 6-8 hours or until the chicken is cooked through and tender.
- Garnish with fresh parsley before serving.
Notes
For extra flavor, add your favorite herbs or spices to the garlic mixture. If you like your potatoes more tender, cut them smaller. Use a meat thermometer to ensure the chicken reaches an internal temperature of 165°F.
