Preparation
- Preheat the oven to 400°F (200°C).
- In a bowl, mix olive oil, minced garlic, herbs, salt, and pepper. Coat the chicken breasts with the mixture and place them in a baking dish.
Cooking
- Bake the chicken for 25-30 minutes or until cooked through.
- While the chicken is baking, boil the potatoes in salted water until tender. Drain and mash with milk and butter until creamy.
- In a skillet, melt the additional butter, add sliced carrots, and sprinkle with brown sugar. Sauté until the carrots are glazed and tender, about 8-10 minutes.
Serving
- Serve the garlic herb chicken alongside creamy mashed potatoes and glazed carrots.
Notes
Store any leftovers in an airtight container in the fridge for about 3-4 days. You can also freeze portions to save for later. Use fresh herbs for the best flavor and adjust garlic to taste. For creamier mashed potatoes, add more milk or butter if desired.
