Preparation
- Preheat the oven to 350°F (175°C).
- Grease a muffin tin with cooking spray or oil.
- In a mixing bowl, whisk the egg whites until slightly frothy.
- Add the diced bell peppers, chopped spinach, shredded cheese, salt, and pepper to the egg whites.
- Pour the mixture evenly into the prepared muffin tin, filling each cup about 3/4 full.
- Bake for 20-25 minutes, or until the egg bites are set and lightly golden.
- Let them cool for a few minutes before removing from the tin.
Notes
These egg bites can be enjoyed warm, on their own or with fresh fruit. They store well in the refrigerator for up to a week, or can be frozen for up to three months. Reheat from frozen in the microwave.
