- In a blender, combine cottage cheese, eggs, oats, baking powder, salt, and vanilla extract. Blend until smooth.
Cooking
- Heat a non-stick skillet over medium heat and lightly grease with cooking spray or oil.
- Pour 1/4 cup of the batter onto the skillet for each pancake.
- Cook until bubbles form on the surface, then flip and cook until golden brown on the other side.
- Serve warm with your favorite toppings.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days or freeze them for up to 2 months with parchment paper in between.
