Ingredients
  

Pancake Batter
  • 1 cup cottage cheese Use low-fat if preferred.
  • 4 large eggs
  • 1/2 cup oats
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • Cooking spray or oil for the pan For greasing the skillet.

Method
 

Preparation
  1. In a blender, combine cottage cheese, eggs, oats, baking powder, salt, and vanilla extract. Blend until smooth.
Cooking
  1. Heat a non-stick skillet over medium heat and lightly grease with cooking spray or oil.
  2. Pour 1/4 cup of the batter onto the skillet for each pancake.
  3. Cook until bubbles form on the surface, then flip and cook until golden brown on the other side.
  4. Serve warm with your favorite toppings.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days or freeze them for up to 2 months with parchment paper in between.
