  • 2 cups cooked chicken, shredded Use leftover rotisserie chicken to save time.
  • 1 cup broccoli, chopped
  • 1 cup cauliflower, chopped Feel free to add more vegetables like bell peppers or spinach.
  • 1 cup cream cheese, softened For a dairy-free version, substitute with a dairy-free alternative.
  • 1 cup shredded cheddar cheese
  • ½ cup chicken broth
Spices
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • to taste Salt and pepper

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a large mixing bowl, combine the shredded chicken, broccoli, cauliflower, cream cheese, chicken broth, garlic powder, onion powder, salt, and pepper. Mix everything well until combined.
  3. Transfer the mixture into a greased baking dish and spread it evenly.
  4. Sprinkle the shredded cheddar cheese on top.
Cooking
  1. Bake in the preheated oven for 25-30 minutes or until the cheese is bubbly and golden.
  2. Remove from oven and let it cool for a few minutes before serving.

Notes

This casserole can be made ahead of time and stored in the refrigerator. It can also be frozen for up to 2-3 months. Thaw overnight in the refrigerator before reheating.
