  • 2 cups zucchini, sliced
  • 2 cups cooked chicken, shredded Leftover chicken works great.
  • 1 cup shredded mozzarella cheese Feel free to mix cheeses.
  • 1 cup breadcrumbs Can be substituted with crushed whole-grain crackers for a lighter version.
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • to taste Salt and pepper
  • as needed Olive oil for greasing Drizzle a little over the top for added moisture.

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, combine shredded chicken, sliced zucchini, garlic powder, Italian seasoning, salt, and pepper.
  3. Spread the mixture evenly in a greased baking dish.
  4. Sprinkle mozzarella cheese, breadcrumbs, and Parmesan cheese evenly on top.
  5. Drizzle a little olive oil over the top for added moisture.
Baking
  1. Bake in the preheated oven for 25-30 minutes or until the top is golden brown and bubbly.
  2. Let cool slightly before serving.

Notes

For storage, let the dish cool completely, cover tightly, and it can be stored in the fridge for up to 3 days. To reheat, place in the oven or microwave until heated through. Consider adding other vegetables like bell peppers or spinach for more flavor.
