Ingredients

For the batter
  • 1 large onion, sliced into rings
  • 1 cup shredded mozzarella cheese You can substitute with cheddar or pepper jack for different flavors.
  • 2 large eggs
  • 1/2 cup almond flour
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Oil for frying (optional) Can be used if not using a chaffle maker.

Method

Preparation
  1. Preheat your chaffle maker according to the manufacturer's instructions.
  2. In a bowl, mix together shredded mozzarella, eggs, almond flour, garlic powder, paprika, salt, and pepper until well combined.
  3. Dip each onion ring into the batter, ensuring it’s well coated.
Cooking
  1. Place the coated onion rings in the chaffle maker and cook for about 3-5 minutes, or until golden and crispy.
  2. If frying, heat oil in a pan and fry the rings until crispy.
Serving
  1. Serve immediately as a snack or side dish with your favorite dipping sauces.

Notes

Coat the onion rings well for better crunch. You can add your favorite spices to the batter for a personal touch. Double-coating the onions before cooking can provide an extra crispy texture.
