Preparation
- Preheat the oven to 400°F (200°C).
- In a bowl, mix together almond flour, parmesan cheese, garlic powder, Italian seasoning, salt, and pepper.
- In another bowl, beat the eggs.
- Dip each chicken breast in the egg, then coat with the almond flour mixture, pressing to make sure it sticks well.
Cooking
- Heat olive oil in a skillet over medium heat.
- Add the chicken and cook until golden brown on both sides, about 4-5 minutes each side.
- After frying, transfer the chicken to a baking dish.
- Top the chicken with marinara sauce and sprinkle with extra cheese if you like.
- Bake for 15-20 minutes until the chicken is cooked through.
- Garnish with fresh basil and serve.
Notes
For an even crunchier coating, try double-dipping the chicken in the egg and then the almond flour mixture before frying. To store leftovers, let them cool completely, then refrigerate in an airtight container for up to 3 days.
