Ingredients
  

Chicken and Coating
  • 4 pieces boneless, skinless chicken breasts
  • 1 cup almond flour Can substitute with regular flour
  • 1 cup grated parmesan cheese Use extra for topping if desired
  • 2 pieces eggs Beaten, for coating
  • 1 teaspoon garlic powder Adjust according to taste
  • 1 teaspoon Italian seasoning Additional herbs can be added to taste
  • Salt and pepper to taste
For Frying and Serving
  • Olive oil for frying
  • Marinara sauce (for serving) Drizzle on top or serve on the side
  • Fresh basil (for garnish)

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, mix together almond flour, parmesan cheese, garlic powder, Italian seasoning, salt, and pepper.
  3. In another bowl, beat the eggs.
  4. Dip each chicken breast in the egg, then coat with the almond flour mixture, pressing to make sure it sticks well.
Cooking
  1. Heat olive oil in a skillet over medium heat.
  2. Add the chicken and cook until golden brown on both sides, about 4-5 minutes each side.
  3. After frying, transfer the chicken to a baking dish.
  4. Top the chicken with marinara sauce and sprinkle with extra cheese if you like.
  5. Bake for 15-20 minutes until the chicken is cooked through.
  6. Garnish with fresh basil and serve.

Notes

For an even crunchier coating, try double-dipping the chicken in the egg and then the almond flour mixture before frying. To store leftovers, let them cool completely, then refrigerate in an airtight container for up to 3 days.
