  • 2 cups cooked chicken, shredded You can use rotisserie chicken for convenience.
  • 1 cup cauliflower florets
  • 1 cup broccoli florets
  • 1 cup cream cheese, softened
  • 1 cup shredded cheddar cheese Divided into two portions.
  • 1/2 cup chicken broth
Spices
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1/2 teaspoon paprika For sprinkling on top.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, combine the cream cheese, chicken broth, garlic powder, onion powder, salt, and pepper. Mix until smooth.
  3. Stir in the shredded chicken, cauliflower, broccoli, and half of the cheddar cheese until well coated.
  4. Transfer the mixture to a greased baking dish.
  5. Sprinkle the remaining cheddar cheese and paprika on top.
Cooking
  1. Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and golden.
Serving
  1. Let cool for a few minutes before serving warm from the oven.
  2. Serve with a simple salad or low-carb bread.

Notes

Use fresh herbs like parsley for added flavor. You can add more veggies like zucchini or bell peppers for extra nutrition. For a vegetarian version, leave out the chicken and add tofu or tempeh.
