- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the shredded chicken, steamed broccoli, chopped bacon, heavy cream, garlic powder, onion powder, salt, and pepper.
- Stir in 1/2 cup of the cheddar cheese.
- Transfer the mixture to a greased baking dish and sprinkle the remaining cheddar cheese and Parmesan cheese on top.
Baking
- Bake for 25-30 minutes, or until the casserole is bubbly and golden.
- Let cool slightly before serving.
Notes
Store leftovers in an airtight container in the fridge for 3-4 days. You can reheat it in the microwave or in the oven until warm throughout. Feel free to add other low-carb veggies like cauliflower or bell peppers. For a spicy kick, add red pepper flakes or jalapeños. This casserole can be prepared in advance and frozen before baking.
