  • 2 cups cooked chicken, shredded
  • 1 cup broccoli florets, steamed
  • 1/2 cup cooked bacon, chopped
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese divided
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • to taste Salt and pepper
  • 1/4 cup grated Parmesan cheese

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the shredded chicken, steamed broccoli, chopped bacon, heavy cream, garlic powder, onion powder, salt, and pepper.
  3. Stir in 1/2 cup of the cheddar cheese.
  4. Transfer the mixture to a greased baking dish and sprinkle the remaining cheddar cheese and Parmesan cheese on top.
Baking
  1. Bake for 25-30 minutes, or until the casserole is bubbly and golden.
  2. Let cool slightly before serving.

Notes

Store leftovers in an airtight container in the fridge for 3-4 days. You can reheat it in the microwave or in the oven until warm throughout. Feel free to add other low-carb veggies like cauliflower or bell peppers. For a spicy kick, add red pepper flakes or jalapeños. This casserole can be prepared in advance and frozen before baking.
