  • 2 cups cooked chicken, shredded Use rotisserie chicken for convenience.
  • 1 cup cream cheese
  • 1 cup chicken broth
  • 1 cup zucchini noodles (zoodles) Can substitute with spaghetti squash or konjac noodles.
  • 1 cup shredded mozzarella cheese For topping.
  • 1 teaspoon garlic powder Adjust to taste.
  • 1 teaspoon onion powder Adjust to taste.
  • to taste Salt and pepper
  • to taste Parmesan cheese for topping (optional)

Method
 

Cooking
  1. In a large skillet, combine the cream cheese and chicken broth over medium heat until melted and well mixed.
  2. Stir in the shredded chicken, garlic powder, onion powder, salt, and pepper.
  3. Add the zucchini noodles to the skillet and cook for 3-5 minutes until heated through.
  4. Stir in the mozzarella cheese and allow it to melt.
  5. Serve hot, topped with Parmesan cheese if desired.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3-4 days. Reheat in the microwave or on the stovetop until warm. You can customize with different vegetables or cheeses.
