Preparation
- Cook the pasta according to package instructions, then drain and cool.
- In a large bowl, combine the cooked pasta, cottage cheese, cherry tomatoes, cucumber, red onion, and bell pepper.
Dressing and Serving
- In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper.
- Pour the dressing over the pasta salad and toss to combine.
- Add fresh herbs if desired and toss again.
- Serve chilled or at room temperature.
Notes
Storing in an airtight container in the fridge is recommended. It is best enjoyed within 3 days. If it gets too watery, stir before serving.
