Preparation
  1. Cook the pasta according to package instructions, then drain and cool.
  2. In a large bowl, combine the cooked pasta, cottage cheese, cherry tomatoes, cucumber, red onion, and bell pepper.
Dressing and Serving
  1. In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper.
  2. Pour the dressing over the pasta salad and toss to combine.
  3. Add fresh herbs if desired and toss again.
  4. Serve chilled or at room temperature.

Notes

Storing in an airtight container in the fridge is recommended. It is best enjoyed within 3 days. If it gets too watery, stir before serving.
