- In a bowl, mix the cottage cheese, flour, egg, baking powder, salt, and olive oil until smooth.
- Heat a skillet over medium heat and lightly grease it.
- Pour a ladle of the mixture onto the skillet and spread it into a flatbread shape.
- Cook for about 2-3 minutes on each side or until golden brown.
- Repeat with the remaining batter.
- Serve warm, optionally topped with your favorite herbs or additional toppings.
Notes
To store, let it cool completely, then place in an airtight container in the refrigerator for up to 3 days. For longer storage, freeze wrapped tightly in plastic wrap or foil.
