Method
 

Preparation
  1. In a bowl, mix the cottage cheese, flour, egg, baking powder, salt, and olive oil until smooth.
  2. Heat a skillet over medium heat and lightly grease it.
  3. Pour a ladle of the mixture onto the skillet and spread it into a flatbread shape.
  4. Cook for about 2-3 minutes on each side or until golden brown.
  5. Repeat with the remaining batter.
  6. Serve warm, optionally topped with your favorite herbs or additional toppings.

Notes

To store, let it cool completely, then place in an airtight container in the refrigerator for up to 3 days. For longer storage, freeze wrapped tightly in plastic wrap or foil.
