Preparation
- Season the chicken breasts with Cajun seasoning, salt, and black pepper. Make sure each piece is coated well.
- In a large skillet, heat the olive oil over medium heat. Once hot, add the seasoned chicken breasts. Cook for about 5-7 minutes on each side or until the chicken is fully cooked and golden brown. Remove from the skillet and set aside.
- In the same skillet, add the minced garlic and sauté for about 1 minute until fragrant.
Cooking
- Mix in the low-fat Greek yogurt and chicken broth. Stir well to combine and create a creamy sauce. Let it simmer for a few minutes.
- Return the chicken to the skillet, ensuring it's well coated in the creamy sauce. Allow everything to heat through for another 2-3 minutes.
Rice Preparation
- Meanwhile, in a medium pot, combine the long grain rice, water, and a pinch of salt. Bring to a boil, then reduce the heat to low, cover, and let simmer for about 15-20 minutes until the rice is fluffy.
- Once the rice is ready, stir in the unsalted butter for extra flavor and richness.
Serving
- Serve the creamy Cajun chicken over a bed of garlic rice. Finish with chopped parsley for a fresh touch.
Notes
Make sure not to overcook the chicken to keep it juicy. For extra spice, add more Cajun seasoning or serve with hot sauce on the side. Feel free to add vegetables like bell peppers or spinach for added nutrients.
