  • 1 cup Cottage cheese Use low-fat or regular cottage cheese.
  • 2 large Eggs
  • 1 cup Almond flour Makes the wraps gluten-free.
  • 1 teaspoon Salt Adjust to taste.
  • 1/2 teaspoon Pepper Adjust to taste.
Filling Ingredients
  • 4 oz Cream cheese Softened for easy spreading.
  • 4 slices Crispy bacon Cooked and crumbled.
  • 1 cup Tomatoes Diced, use fresh tomatoes.

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. In a blender, combine cottage cheese, eggs, almond flour, salt, and pepper. Blend until smooth.
  3. Spread the mixture onto a parchment-lined baking sheet into thin circles.
Baking
  1. Bake for 15-20 minutes until golden and set.
  2. Allow to cool, then fill each wrap with cream cheese, crispy bacon, and diced tomatoes.
  3. Roll and serve as desired.
