Ingredients
  

For the crepe batter
  • 1 cup cottage cheese Make sure it is blended well for a smoother filling.
  • 3 large eggs
  • 1 cup milk
  • 1 cup all-purpose flour
  • 1/4 cup sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
For the filling
  • 1 cup mascarpone cheese
  • 1/4 cup powdered sugar
  • 1/2 cup brewed coffee (cooled) You can use flavored coffee for a unique twist.
For dusting
  • Cocoa powder For dusting before serving.

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. In a mixing bowl, blend the cottage cheese, eggs, milk, flour, sugar, vanilla extract, and baking powder until smooth.
  3. Pour the batter onto a parchment-lined sheet pan and spread it evenly.
  4. Bake for 15-20 minutes until golden.
  5. Remove from the oven and let it cool.
Filling and Assembly
  1. In another bowl, mix the mascarpone cheese with the powdered sugar and cooled coffee until well combined.
  2. Spread the mascarpone filling over the cooled crepe, then carefully roll it up starting from one edge.
  3. Dust with cocoa powder before serving.

Notes
