  • 8 oz pasta (any type) Use any pasta shape you prefer.
  • 1 cup cottage cheese For a creamier texture, consider using ricotta.
  • 1 cup shredded mozzarella cheese Divided into two portions.
  • 1/2 cup grated Parmesan cheese
  • 2 cups marinara sauce Or use Alfredo or pesto for variation.
  • 1 cup cooked vegetables (like spinach or broccoli) Feel free to add more vegetables like bell peppers or zucchini.
  • 1 tsp garlic powder
  • to taste Salt and pepper
  • 1/2 tsp Italian seasoning

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Cook the pasta according to the package instructions until al dente, then drain.
  3. In a large bowl, combine the cottage cheese, half of the mozzarella cheese, Parmesan cheese, marinara sauce, cooked vegetables, garlic powder, salt, pepper, and Italian seasoning.
  4. Stir in the cooked pasta until well mixed.
  5. Transfer the mixture to a baking dish, and top with the remaining mozzarella cheese.
  6. Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and golden.
  7. Serve warm and enjoy your hearty dinner!

Notes

Store leftovers in an airtight container for up to 3 days. Reheat in the oven or microwave. Can be made ahead of time and refrigerated before baking.
