  • Salt and pepper to taste
  • Optional toppings like breadcrumbs or herbs

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Cook the pasta according to package instructions and drain.
  3. In a large mixing bowl, combine cottage cheese, 1/2 cup of shredded cheese, marinara sauce, cooked vegetables, egg, salt, and pepper.
  4. Stir in the cooked pasta until well combined.
  5. Pour the mixture into a baking dish and sprinkle the remaining shredded cheese on top.
  6. Optional: Add breadcrumbs or herbs on top for extra texture.
  7. Bake for 25-30 minutes, or until the cheese is bubbly and golden.
  8. Let cool for a few minutes before serving.

Notes

Store leftovers in an airtight container in the fridge for about 3-4 days. Reheat in the oven or microwave. Use whole wheat pasta for added nutrition and feel free to mix different vegetables or add protein for a hearty variation.
