  • 1 cup full-fat cottage cheese
  • 1/4 cup marinara sauce (low sugar preferred)
  • 1/4 cup shredded mozzarella cheese Use low-fat for lighter option
  • 2 tablespoons mini pepperoni slices Substitute with veggies for vegetarian version
  • 1/2 teaspoon Italian seasoning
  • 1 pinch garlic powder
  • Black pepper to taste

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C) if baking, or prepare a microwave-safe bowl.
  2. Spread the cottage cheese evenly across the bottom of the bowl to form the ‘crust’ base.
  3. Spoon the marinara sauce over the cottage cheese layer.
  4. Sprinkle the mozzarella cheese evenly over the sauce.
  5. Distribute the pepperoni slices and any other desired toppings over the cheese.
  6. Season the top with Italian seasoning and garlic powder.
Cooking
  1. Bake for 10 to 12 minutes, or until the cheese is melted and bubbly.
  2. If using a microwave, heat on high for 60 to 90 seconds, watching carefully until the cheese melts.
  3. Let it cool for one minute before eating directly from the bowl.

Notes

Serve hot right from the oven or microwave. Pair with fresh salad or vegetables for a complete meal. If storing leftovers, keep in an airtight container in the fridge for up to 2 days.
