  • 6 large eggs
  • 1/2 cup cooked bacon, chopped

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, whisk together the cottage cheese and eggs until well combined.
  3. Stir in the chopped bacon, and add salt, pepper, and any optional ingredients.
  4. Grease a muffin tin and pour the mixture evenly into the cups.
  5. Bake for 20-25 minutes or until the egg bites are set and lightly golden.
  6. Let them cool slightly before removing them from the tin, then enjoy!

Notes

Serve warm or at room temperature. Pair with fresh fruit or a light salad. Add salsa or hot sauce for extra flavor. For best results, store in an airtight container and refrigerate for up to 4 days or freeze for up to 2-3 months.
