  • 1 piece chicken breast, cooked and diced Use leftover chicken to save time.
  • 1/2 cup marinara sauce Any pasta sauce can be used.
  • 1/2 cup shredded mozzarella cheese Experiment with different cheeses if desired.
  • 1 tablespoon olive oil For cooking.
  • Salt and pepper to taste
  • Fresh basil or parsley for garnish

Method
 

Preparation
  1. In a bowl, combine the cooked chicken and marinara sauce.
  2. Heat olive oil in a pan over medium heat.
  3. Add the chicken and sauce mixture to the pan and cook until heated through.
  4. Stir in the cottage cheese until well combined.
  5. Sprinkle with mozzarella cheese and cover with a lid until the cheese melts.
  6. Season with salt and pepper to taste.
  7. Serve hot, garnished with fresh basil or parsley.

Notes

To store leftovers, place the dish in an airtight container. Keep it in the fridge for up to three days. To reheat, simply warm it in the microwave or on the stovetop until hot.
