Preparation
  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine the cottage cheese and eggs, and blend until smooth.
  3. Gently fold in the blueberries, baking powder, and salt.
  4. Pour the mixture onto the prepared baking sheet, forming a cloud shape.
Baking
  1. Bake for 20-25 minutes or until the edges are golden and the center is set.
  2. Let it cool before slicing, and enjoy as a breakfast or snack!

Notes

Serve plain or add honey/maple syrup for extra sweetness. Pairs well with tea/coffee. Store leftovers in an airtight container in the fridge for up to 3 days or freeze slices wrapped well.
