- In a mixing bowl, whisk together the flour, milk, eggs, vanilla extract, cinnamon, and sugar until smooth.
- Heat a non-stick skillet over medium heat and lightly grease it with cooking spray or butter.
Cooking
- Pour about 1/4 cup of the batter into the skillet and swirl to coat the bottom evenly.
- Cook for 1-2 minutes until the edges start to lift and the bottom is golden.
- Flip and cook for another minute.
- Remove from the skillet and repeat with the remaining batter.
Serving
- Serve warm topped with Greek yogurt, a drizzle of maple syrup, and your favorite toppings.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days. To reheat, place them in a skillet for a minute on each side or microwave for about 20-30 seconds until warm. For thinner crepes, add more milk to the batter.
