  • 2 cups sweet corn (fresh or canned)
  • 1 cup cherry tomatoes, halved
  • 1 piece avocado, diced
  • 1/4 cup red onion, diced
  • 1/2 cup cilantro, chopped
Dressing
  • 1/2 cup cream or Greek yogurt
  • 1 piece lime, juiced
Seasoning
  • to taste salt and pepper
  • optional chili powder for spice

Method
 

Preparation
  1. In a large bowl, combine the grilled chicken, sweet corn, cherry tomatoes, avocado, red onion, and cilantro.
  2. In a separate small bowl, mix together the cream (or Greek yogurt) and lime juice.
  3. Pour the dressing over the salad and toss gently to combine.
  4. Season with salt, pepper, and optional chili powder to taste.
  5. Serve immediately or refrigerate for up to a day for flavors to meld.

Notes

Chicken Street Corn Salad is best served fresh. Plate it individually or serve in a large bowl for family-style meals. Top with extra cilantro or a squeeze of lime for added flavor. If you have leftovers, store in an airtight container in the fridge for up to a day.
