Preparation
- Preheat the oven to 375°F (190°C).
- In a skillet, heat the olive oil over medium heat.
- Add the sliced mushrooms to the skillet and cook until they are softened.
- Add the spinach to the skillet and cook until it wilts.
- In a bowl, mix the cream cheese with garlic powder, salt, and pepper until smooth.
Baking
- In a baking dish, layer the chicken breasts.
- Spread the cream cheese mixture on top of the chicken.
- Add the spinach and mushroom mixture on top of the cream cheese.
- Sprinkle the mozzarella cheese over everything.
- Bake in the preheated oven for 25-30 minutes or until the chicken is cooked through and the cheese is bubbly.
- Let it rest for a few minutes before serving.
