Ingredients
  

Pasta and Protein
  • 8 oz macaroni
  • 1 cup cooked chicken, shredded You can use leftover rotisserie chicken.
Dairy
  • 1 cup cheese (cheddar or mozzarella) Feel free to experiment with different types of cheese.
  • 1 cup milk
  • 1/2 cup Greek yogurt
Vegetables
  • 1/2 cup diced tomatoes
  • 1/2 cup spinach Can be replaced or supplemented with other veggies.
Seasoning and Oil
  • to taste Salt
  • to taste Pepper
  • to taste Garlic powder You can add spices like paprika or Italian seasoning for extra flavor.
  • for cooking Olive oil

Method
 

Preparation
  1. Cook macaroni according to package instructions, drain, and set aside.
  2. In a skillet, heat olive oil over medium heat.
  3. Add the cooked chicken and diced tomatoes, sautéing for a few minutes.
  4. Stir in the spinach until wilted.
Cheese Sauce
  1. In a separate bowl, mix cheese, milk, Greek yogurt, salt, pepper, and garlic powder.
Combine and Cook
  1. Combine the cooked macaroni with the chicken mixture and pour the cheese sauce over it.
  2. Stir to combine and cook for an additional 5 minutes until heated through.
Serving
  1. Serve warm and enjoy your delicious, protein-packed chicken macaroni bowl!

Notes

For extra crunch, top your bowl with breadcrumbs before baking for a few minutes. The dish pairs well with a side salad or crusty bread.
