Preparation
- Preheat the oven to 375°F (190°C).
- In a large mixing bowl, combine the eggs, milk, salt, and pepper.
- In a greased baking dish, layer the hash browns, followed by the shredded chicken and any optional vegetables.
- Pour the egg mixture over the top, then sprinkle with cheese.
Baking
- Bake for 30-35 minutes or until the eggs are set and the top is golden brown.
- Allow to cool slightly before serving.
Notes
Serve warm with fresh fruit or toast. You can also add hot sauce or salsa for an extra kick. Store leftovers in an airtight container in the fridge for up to 3 days.
